1. Place the lamb, yoghurt, harissa or chilli paste, garlic and coriander in a bowl. season with salt and pepper and mix well. Divide the mixture into four portions and form each into a sausage shape. Thread two lamb portions and three apricots alternately on to two metal skewers. |
2. To make the couscous, bring the stock to the boil in a small saucepan. Add the beans and carrot and simmer for three minutes. Add the couscous to the pan, stir, then turn off the heat. Cover with a lid and leave for 12-15 minutes. |
3. Meanwhile, preheat the grill to moderately hot and line the grill pan with foil. Place the lamb skewers on the grill rack and cook for 12-15 minutes, turning occasionally, until the lamb is cooked through. Fluff up the couscous with a fork and serve with the lamb skewers, garnished with onion slices, if liked. |
4. Serve with a crisp green salad |
