Spicy Tunisian Lamb

Ingredients

  • 150 grams lean minced lamb
  • 10 milliliters plain yoghurt
  • 5 milliliters harissa or chili paste
  • 1 small garlic clove, peeled and crushed
  • 15 milliliters chopped fresh coriander
  • salt and pepper
  • 6 large ready-to-eat dried apricots
  • 150 milliliters hot vegetable stock
  • 25 grams green beans, trimmed and cut into short lengths
  • 1 small carrot, cut into matchsticks
  • 50 grams couscous
  • slices of red onion, to garnish

Method

1. Place the lamb, yoghurt, harissa or chilli paste, garlic and coriander in a bowl. season with salt and pepper and mix well. Divide the mixture into four portions and form each into a sausage shape. Thread two lamb portions and three apricots alternately on to two metal skewers.
2. To make the couscous, bring the stock to the boil in a small saucepan. Add the beans and carrot and simmer for three minutes. Add the couscous to the pan, stir, then turn off the heat. Cover with a lid and leave for 12-15 minutes.
3. Meanwhile, preheat the grill to moderately hot and line the grill pan with foil. Place the lamb skewers on the grill rack and cook for 12-15 minutes, turning occasionally, until the lamb is cooked through. Fluff up the couscous with a fork and serve with the lamb skewers, garnished with onion slices, if liked.
4. Serve with a crisp green salad
