Spicy Pork With Fragrant Basil

This is a mouth-watering Thai-inspired dish. The minced pork is quickly stir-fried and tossed with so much fragrant basil that the herb almost plays the role of a green vegetable. Thai cookery, it seems, can never use too much basil. And here it is used to such good effect, helping to produce a marvellously aromatic dish that goes extremely well with plain rice. It is ideal for a quick but exotic family meal.

Ingredients

  • 1 ½ tbsp Ground nut oil
  • 3 tbsp Garlic, coarsely chopped
  • 3 tbsp Red chilli peppers, de-seeded and finely chopped
  • 450 grams Pork, minced
  • 2 tbsp Fresh coriander, finely chopped
  • 2 tbsp Fish sauce (nam pla)
  • 1 tbsp Oyster sauce
  • 2 tsp Sugar
  • 150 milliliters Chicken stock
  • large handful Basil leaves
  • Rice, to serve

Method

1. Heat a wok or large frying pan over a high heat and add the oil. When it is very hot and slightly smoking, add the garlic and chilli peppers and sir-fry for 30 seconds.
2. Add the pork and stir-fry for 3 minutes. Then add the coriander, fish sauce, oyster sauce, sugar and stock and continue to stir-fry for 3 minutes.
3. Add the basil and stir-fry for another minute. Turn onto a warm platter and serve at once with rice.
