1. Gently heat the oil, garlic and chilli together in a saucepan for 2-3 minutes without allowing it to colour. Drain the juice from the clams into the pan, add the wine and boil rapidly to reduce until the sauce looks syrupy. |
2. Meanwhile, cook the spaghetti in plenty of boiling lightly salted water for 8-10 minutes or according to the packet instructions until a1dente (tender, but still firm to the bit). |
3. Stir the tomatoes and parsley into the sauce and cook for 2 minutes. Add the clams and heat through gently. Drain the spaghetti and toss with the clam sauce, adding pepper to taste. Serve in warm bowls. |
