Spaghetti Vongole

Ingredients

  • 1 tablespoon olive oil
  • 1 large garlic clove, peeled and crushed
  • 1 red chilli, seeded and finely sliced
  • 1 medium can baby clams (vongole)
  • 100 milliliters white wine
  • 250 grams spaghetti
  • 200 grams canned chopped tomatoes
  • 1 tablespoon chopped fresh parsley
  • black pepper, to taste

Method

1. Gently heat the oil, garlic and chilli together in a saucepan for 2-3 minutes without allowing it to colour. Drain the juice from the clams into the pan, add the wine and boil rapidly to reduce until the sauce looks syrupy.
2. Meanwhile, cook the spaghetti in plenty of boiling lightly salted water for 8-10 minutes or according to the packet instructions until a1dente (tender, but still firm to the bit).
3. Stir the tomatoes and parsley into the sauce and cook for 2 minutes. Add the clams and heat through gently. Drain the spaghetti and toss with the clam sauce, adding pepper to taste. Serve in warm bowls.

Notes

NB: MAKES TWO SERVINGS!

* Don't add any salt to this dish before you've tasted it; clams often come in a briny liquid.
* If you don't want to buy a whole bottle of wine just for this dish, look out 'taster' bottles and small cans of wine. Always choose a wine that you'd also enjoy drinking, as very cheap 'cooking' wines often spoil the flavour of a dish.
* If you want to make this a very generous and rich serving for one, reduce the spaghetti by about a half
