Paprika Pork

Ingredients

  • 2 tsp sunflower or vegetable oil
  • 175 grams lean pork, cubed
  • 1 small onion, finely chopped
  • 1 garlic clove, crushed
  • 1 tsp paprika
  • 1 pinch cayenne
  • 200 grams can of tomatoes
  • 1 tbsp plain yoghurt
  • plain rice or noodles, to serve

Method

1. Heat the oil in a saucepan until it is very hot and quickly fry the cubed pork until it is browned. Remove from the saucepan.
2. In the same oil, fry the onion and garlic until soft.
3. Stir in paprika, cayenne, a little salt and the tomatoes.
4. Return the meat to the pan and bring to the boil. Reduce the heat, cover and simmer for 30 minutes, until the pork is tender.
5. Remove from the heat and swirl in the yoghurt.
6. Serve with rice or noodles and a green salad.

Notes

Don't forget the yoghurt! I did...
