1. Trim the chicken breast, if necessary, then place between two sheets of clingfilm (plastic wrap) or baking parchment. Gently beat with a meat mallet or rolling pin to an even thickness. |
2. Preheat the grill (broiler) to medium-hot and line the grill pan with foil. Mix together the remaining ingredients, seasoning with a little salt and pepper, and spread over both sides of the chicken. Place the chicken on the grill (broiler) rack and cook for 4-5 minutes. |
3. Turn the chicken over, baste with the pan juices and grill (broil) for a further 5 minutes or until cooked through. Serve straight away, garnished with basil leaves, with any remaining pan juices drizzled over. |
4. Serve with: Grilled cherry vine tomatoes, wedges of lemon, and linguine or tagliatelle pasta |
