Griddled Sardines with Lentils and Tomatoes

Ingredients

  • 1 tbsp olive oil
  • ½ red onion, peeled and finely chopped
  • pinch dried chili flakes
  • 1 small can green lentils, drained and rinsed
  • 2 ripe tomatoes, quartered and chopped
  • 2 tbsp water
  • 2 or 3 fresh sardines, cleaned and scaled
  • 1 tbsp fresh coriander, chopped
  • salt and pepper, to taste
  • sprig fresh coriander, to garnish
  • crusty brown roll, to serve
  • lemon, to serve

Method

1. 1 Heat the oil in a non-stick frying pan, add the onion and cook for 4-5 minutes until beginning to soften. Add the chilli flakes and cook for a further 2 minutes
2. 2 Stir in the lentils, tomatoes and water. Bring to a gentle simmer and cook for 2-3 minutes, stirring frequently.
3. 3 Meanwhile, make several shallow diagonal slashes on each side of the sardines. Toss in the chopped coriander, if using, and season generously with salt and pepper
4. 4 Heat a ridged cast-iron grill pan or non-stick frying pan until hot. Add the sardines and cook for 3-4 minutes, then turn over and cook for a further 3-4 minutes, until lightly charred and cooked through. Pile the lentil mixture on to a warm serving plate, top with the sardines, and serve straight away, garnished with a sprig of coriander, if liked.
5. Serve with: crusty brown rolls and wedges of lemon
