1. 1 Remove the skin from the chicken and cut into bite-sized pieces. Put the cornflour into a shallow dish and toss the chicken pieces in it. Sprinkle the soy sauce over the chicken and leave to stand for 20 minutes. |
2. 2 Heat the oil in a large frying pan (skillet) or wok and stir-fry the chicken for 2-3 minutes. Push the chicken to one side, turn down the heat and add the.onion and garlic. Cook for a further 2 minutes. |
3. 3 Add the broccoli florets and the mushrooms. Continue stirfrying these for 1 minute, then mix all the ingredients together, drawing in the chicken from the side. Pour over the sherry and heat through for another couple of minutes. |
4. 4 Serve with rice or noodles. |
