Chicken with Mushrooms and Broccoli

Ingredients

  • 1 Boneless chicken breast
  • 2 tsp cornflour
  • 2 tsp soy sauce
  • 1 tbsp sunflower or vegetable oil
  • 1 small onion, finely chopped
  • 1 garlic clove, crushed
  • 50 grams broccoli, divided into florets
  • 50 grams button mushrooms
  • 2 tbsp sherry
  • rice, to serve

Method

1. 1 Remove the skin from the chicken and cut into bite-sized pieces. Put the cornflour into a shallow dish and toss the chicken pieces in it. Sprinkle the soy sauce over the chicken and leave to stand for 20 minutes.
2. 2 Heat the oil in a large frying pan (skillet) or wok and stir-fry the chicken for 2-3 minutes. Push the chicken to one side, turn down the heat and add the.onion and garlic. Cook for a further 2 minutes.
3. 3 Add the broccoli florets and the mushrooms. Continue stirfrying these for 1 minute, then mix all the ingredients together, drawing in the chicken from the side. Pour over the sherry and heat through for another couple of minutes.
4. 4 Serve with rice or noodles.

Notes

Not bad. Might be better if you actually remember to push the chicken to one side while you cook the rest of the stuff, like it says!
