1. Heat the oil in a frying pan, add the mushrooms and cook over a gentle heat for 4-5 minutes, until softened |
2. Add the white wine, increase the heat and simmer for 5 minutes |
3. Stir in the herbs and fromage frais |
4. Cut the salmon into thin strips and add to the pan. Reheat gently, but do not allow to boil. Add the lemon juice and season with salt and pepper |
5. Meanwhile, cook the linguine in lightly salted, boiling water until just tender. Drain and turn onto a serving plate |
6. Spoon the salmon sauce over the pasta and garnish with chives. |
