Linguine with Smoked Salmon and Mushrooms

Ingredients

  • 15 milliliters olive oil
  • 50 grams button mushrooms, sliced
  • 60 milliliters dry white wine
  • ½ teaspoon fresh dill, chopped
  • 2 teaspoons fresh chives, snipped, plus extra for garnishing
  • 120 milliliters fromage frais
  • 50 grams smoked salmon
  • 1 teaspoon lemon juice
  • salt and pepper
  • 75 grams linguine

Method

1. Heat the oil in a frying pan, add the mushrooms and cook over a gentle heat for 4-5 minutes, until softened
2. Add the white wine, increase the heat and simmer for 5 minutes
3. Stir in the herbs and fromage frais
4. Cut the salmon into thin strips and add to the pan. Reheat gently, but do not allow to boil. Add the lemon juice and season with salt and pepper
5. Meanwhile, cook the linguine in lightly salted, boiling water until just tender. Drain and turn onto a serving plate
6. Spoon the salmon sauce over the pasta and garnish with chives.
